Most people can only grasp a small part of Hanoi cuisine, simple, sophisticated, delicate, all of that. But there are quiet surprises here, dishes with unexpected structures and stories that don’t immediately reveal themselves.
Take this dessert, or actually, this savory dessert. Across Vietnam, fried donuts are almost always sweet. They’re usually filled with mung bean or coconut mung bean, coated in sesame seeds, rolled in sugar, or glazed with caramelized sugarcane syrup. That’s the version everyone recognizes.
But in Hanoi, there’s one stuffed with ground pork and wood ear mushrooms, eaten with sweet, spicy fish sauce and a side of green papaya and carrot pickles. It blurs the line between snack and dessert in a very Hanoi way. Unless you truly understand the local food scene or go out with someone local, you probably wouldn’t think to try it.
